One of the preeminent places for molecular gastronomy in the United States features surprises like a smoked fish course in a fish tank and shots of distilled jalapeño.

Possibly the most interesting food in town. Lasers, liquid nitrogen, edible menus - can you tell Chef Cantu gets grants from NASA?

Molecular gastonomy. Flavor twisting. Yup, both are a thing now. And this is the spot to try 'em out. I love this spot for a foodie-riffic date.
Dinner and a show in one place.
You won't need to go out after dinner at moto -- and you probably won't have time anyhow! This is a dining "experience". Be prepared for an all-evening affair to be savored, course by course. And glass by glass, as their wine selections are worth the price. This is "science" food, in that nothing tastes the way it looks or the way you might expect from appearances.
This should be all about the food -- ask questions, take your time, have fun! Not a place to go often, but a great place to take guests with a foodie bent.
bring your camera.... had the 10-course and almost felt obligated to get the flight since there was a limited selection otherwise (and too difficult to pair with one varietal anyway). there were a few highs and lows in the proceedings - most notably an ironically tepid onion soup broth after a long delay for that course - but that was more than rectified with an extra desert or two. some of the wine pairings were questionable, but in the end it was a unique dining experience and worth trying at least once. in particular we enjoyed the cuban sandwich cigar and the graham cracker chocolate bomb, but there were other surprises that could only be captured with a digital olympus to be believed.
Most fun we have ever had eating out, Terrific customer service. We did the ten course tasting menu and found Chef Cantu's food was excellent from beginning to end. The highlights of the night were the Wahoo, the unique take on Pork and Beans and the Apple Pie ala mode Truffles. The food was prepared using unique techniques (liquid nitrogen anyone) that meant your eyes were telling you different things than your taste buds. Overall definitely the most fun we have ever had eating out.
A true culinary visionary..
I must start by saying that I am a Chef & Culinary Instructor, so I understand the preparations, techniques, and machinery used. The skill level needed to execute this experience is nothing short of scholarly and don't think "average diners" get it. I saw some not so hot reviews and have to ask what they were thinking. Go to Benihanas - This is a cutting edge, gastronomic playground with all of the bells and whistles.
My experience was on par with El bulli, Alinea, and the French Laundry and yes, I have been to all three. Where they might be different in style, design, and mssion - They are some of the world's best and Chef Cantu lived up to this high level. Bravo Chef and entire staff!!!!!!!
Bravo, Moto!. My dining companion and I had a most marvelous evening as Moto's guests. The service and attentiveness of the staff was impeccable. Our GTM experience lasted nearly 5 hours, but the time passed all too quickly. The pacing was well thought out and no detail was left unattended... fresh linens , expert wine service, crisp, efficient presentation of each course accompanied by concise informative descriptions. The whole event was orchestrated like an opera, each taste and visual sensation building upon the previous. The wine pairings were genius. We both marveled at the amount of time and research that must have gone into such a body of work. Bravo to the chef and staff...we were amazed, amused, satisfied and delighted by every aspect!
Not at all what you expect. As a regular at Moto, I feel as though it needs to come with a warning label as well as a diclaimer on the menu. Warning: Be prepared to be schocked and amazed. People who have dull taste buds need not continue. They offer attentive service, outstanding ciusine and a staff that is knowledgeable and accomodating.
Great once, Ok Twice (Two tripper review). Did the GTA first time through, great, but the wine got to me, was sick that night. Second time out we did the 10 course, got the same stuff we got (just less of it) from the GTA. We specifically were asking for a new menu this time, they have on the computers what we ate last time. When we made a request for the "ball that you break open with mallet", which was on the frappin internet website, they said, no. This time around we ordered no wine, immediately our experience contrasted from our first. I felt rushed out the door and also pressured all night for wine by that loud hostess. We had the same waiter (asian guy smiley), he was awesome, but halfway through we got some mumbling toad that took over for him and he sounded like it was his first night. Oh well. All I ask is that you people stick (close) to the menu on the website because if I'm coming over again, I want something different. It seems we were given left overs from the GTA people that night. What was served was nothing on the internet menu when I got home, it was all GTA stuff, the same stuff we had. Oh well, unless they stick to their guns I aint comin back. (And I'd like to)

Check it Out!. I don't know how anyone could have a bad experience! My dinner was perfect from the taste of food to the flawless service. There was a wine I didn't care for, and the waitress brought me a double pairing for the next corse! She even brought me one course again because I liked it so much. I would reccommend to the people who had a bad experience to try it again. Every place deserves a second chance!
Terrible.
Had been several times before, and it was good, but was getting worse. This time however, it was AWFUL - a total disappointment. Moto hadn't gone down hill as much as it fell off a cliff.
Terrible service - waited 15 minutes after being seated for a menu/server. Wait staff continued to be completely uninterested in service, pouring flat water into sparkling water 5 separate times, and not offering fresh glass.
We felt as if we were being laughed at for eating the food they were giving us, having one course introduced (verbatim): "it, I don't know, gets chewy, and I guess you eat it or whatever..."
It was so bad we left before the birthday surprise. When we asked for the check early, the lead server didn't ask if anything was wrong, she simply said "You're full, huh."
Utter, total disappointment. For the money they ask you to spend, it's an insult. Will not go back.
