A James Beard nominated chef sets up shop in this chic hotel restaurant in Naperville..
Upon entering these luxe surroundings, guests might ask: What's with the funny name? Chef Jimmy Sneed, who earned James Beard noms at his now-closed Virginia restaurant The Frog and The Redneck, came up with the moniker as a tribute to the Chesapeake Bay blowfish that local crabbers described as sweet as sugar and ugly as a toad. Indeed, seafood figures prominently into the menu - from jumbo lump crab cakes to sauteed red snapper served with eggplant caviar and surry sausage butter sauce. For meat eaters: American Kobe beef short ribs and rotisserie leg of lamb.
