Balsan has a very long, beautiful bar. Perfect for a long, beautiful stay at the absolutely perfect Elysian.

The flagship restaurant of the Waldorf, and one of the best brunches around. There's a whole half-lobster on top of this seafood tower, plus shrimp, oysters, mussels and everything else you could want.

A raw bar, charcuterie and wood-burning oven lend European flair to the bistro space, which gleams like a vintage piece of jewelry. Behind the marble-topped bar, etched glass reflects a snowflake design, a nice complement to the pewter and gunmetal tones throughout the room. A studied staff minds the details for hotel guests and the Gold Coast elite, whether it’s a perfectly poured custom cocktail or well-timed appetizer (like the popular tarte flambee with sweet onions, bacon and cheese). Chef Jason McCleod helms the kitchen, sticking to seasonal, straightforward cuisine like duck breast, pork sausage and honey-glazed tenderloin.
