I'm not a big one for modish, upscale burgers, but I will make an exception for Au Cheval, a stylish meatery in Chicago's West Side that makes, among other things, one of the best modern burgers in America (if not THE best.)

Diner fare is trendy @ this near-perfect spot. Best service in town, IMO. You must try the fried bologna sandwich-just trust me. And the mille feuille for dessert is worth a trip alone.

Au Cheval calls itself a greasy spoon diner but it serves chicken liver, duck heart & foie. Confusing but decadent. Love the open kitch.
