Andersonville, for all of its Swedish charm, has never seen food this high-level. Step aside, giant cinnamon rolls and smoked herring - fashionable haute cuisine has arrived. Premise, the re-concepted version of former neighborhood favorite In Fine Spirits, boasts a menu of elevated, conceptual dishes with cameos by of-the-moment matter like gels, pearls and powders. Enjoy compressed melon with warm buttermilk and baby cucumbers or fluke tartare with lotus root and sea beans. End your meal with a decadent serving of the spicy chocolate ancho chile torte, and despite dessert you'll leave full but not bursting, ready to wander upstairs to the Salon for one of mixologist Luke LeFlies' craft cocktails.
