Wine country dining in the burbs

The new (?) owners have kept up the quality although the wine list has been shrunk down dramatically (No access of the wine store next door).
Service is excellent and attentive, better than what you typically get in the burbs. Pacing is very good and you usually do not wait between courses.
Menu selection is excellent with some interesting game entrees. Salads are excellent and deserts are also wonderful. My only complaint is that I would like to see a bit more rotation in the overall menu. But the preperation, plating and portions are excellent and a good value.
Check out sundays where they have a jazz band and their wine maker dinners.
A con I used to have was the entry way used to blast cold air into the restaurant during the winter, that has been fixed.

This is one of the most consistently excellent places in Glen Ellyn. The menu is diverse, interesting and takes risks to be exceptional; the wine list is extensive and reasonably priced; and the ambience is city-like and sophisticated. The staff works hard to create an enjoyable experience, and if you have a problem, the owners are accesible to listen and resolve. It's a wonderful special-occasion place that has impressed my out -of towner guests.

This comfortably casual, special-occasion destination features a small, airy dining room with storefront windows and skylight, and a bar with rustic, colorfully painted stools. The eclectic menu offers a few bistro classics such as escargots and steak frites; other offerings include everything from blackened catfish to simple Mediterranean penne with peppers, olives, mushrooms and provolone. Best bets are appetizers like silky duck liver pate loaded with garnishes of pickled beets, mustards and cornichons.

A Wonderful Experience

Time and again, I have found Cab's to be a wonderfully delightful experience. Upon entering, one is struck at once with both the genuine friendliness of the staff and the chic, modern decor. One is quickly enveloped in the festive mood, where laughter and cheery conversation flow freely over tasty appetizers, main courses and wines. The ecclectic menu is a delight to ones tastebuds, often surprising with an astute justapositioning of flavors to great effect. Clearly, Chef Luis Ayllon is one of Chicagoland's best kept secrets!

Incredible Wine List

The wine list has a terribly small upcharge from the wine store next door. Incredible selection (it's more of a book than a list) at great prices.
Menu is good, with recent changes to the dessert menu really making it more well rounded. Comfortable for individuals to dine at the bar and space upstairs for larger groups. Groups of up to 8 can be seated easily in the main dining area.

My wife and I have been frequenting Cab's for four years or so, and it is always my choice for great wine selection, excellent meal and always made to feel special.

Cab's has some of the best food that I have ever had. Chef Luis has mastered fish and how to prepare it. His sauces are outstanding, the flavors that he incorporates together are amazing. The wine list is nothing to sneeze at, it is over 14 pages long, with over 4 pages dedicated to just Cabernet Sauvignons. They have over 25 different wines by the glass too. If you like beer, this place has a selection of micro beers that is not found very often, even in bars.
